To be more precise, the plant pigment called betacyanin, which has antioxidant properties, is what gives beets their lovely red color.

Additionally, adding flax seeds is indeed a great bonus because they give flavor, fiber, omega-3, and tonnes of crunch! Just keep in mind to be using pre-ground flax seeds since after they’ve been ground, they quickly go rancid, and you don’t want your beet crackers to taste fishy.
