You can see that mutton korma is found almost everywhere in India, but it is known by different names in different places. Just like Shahi Mutton Korma, Mutton Degi Korma, Hyderabad’s conventional Korma which is famous as Hyderabadi Mutton Korma, Lucknowi Mutton Korma which is also known as Awadhi Mutton Korma.

Since it has different names, so the making procedure is also a little different but the base of the recipe is the same everywhere. That’s means, the marination which is the most essential part of any type of mutton recipe is the same and does with almost the same ingredients.

Mutton korma is a traditional dish where marinated mutton pieces are cooked in a special gravy that is made with some rich ingredients. Cashew, poppy seeds, watermelon seeds, makhana, etc are used to make the gravy rich and give shahi feelings. For this reason, it is also called Shahi Mutton Korma. If you go looking for history, Korma is a Mughlai dish. However, although I am not completely sure, I know that this korma has been prevalent since the 16th century.
Classically the flavor of any korma is come from a special mixture of spices like coriander, cumin, pepper, nutmeg, etc and combined with yogurt and cook slowly in low temperature or medium heat. As slow as you can cook this korma, you can see the juice of meat comes outside and continue the cooking with the meat juice. This process takes this recipe to the next level.

How to make the Shahi Mutton Korma with Step-by-Step Image:

Marination– To complete the best recipe, marination is a very important part of cooking. Because of that by marination, the subject is prepared for cooking. As well as by marination the mutton will be boiled very well and all other ingredients will fill the entire Mutton of each piece.

Process- First you need to wash the mutton pieces very carefully. And gently squeeze the water. After removing the complete water, take a Bowl and mix the mutton with curd and black paper. After that cover the bowl with cellophane paper and confirm that should be airtight. Put it in a refrigerator to marinate for at least 1 hour.

How To Make Perfect Berestha

To get an extraordinary class to your recipe, The Berestha should be perfect if you would like to apply. So get prepared perfect Berestha.

Choose two big-size onions and clean those very well.
Now carefully chop the onion. No need to chop perfectly, just chop finely.
Then take a non-stick pan and put mustard oil by looking for deep fry. After confirming that the oil becomes hot enough, carefully leave the chopped onion for deep fry.
Keep the frying on low flame. After 15-20 minutes the onion becomes brown. Then take it for cool and can store it in the freezer for its crispness.

Frying Makhana

Take a pan and add one tablespoon of butter. Then half fry the Makhana, Watermelon seeds and cashews. Now grand the all in a mixture. Add such a count of water to make it paste.

The Recipe steps of Mutton Shahi Korma or Mutton Deggi

Now we going to start the complete recipe step by step. It ensures that all steps are necessary for the best result.

Step 1- Put a wok on the oven and add four tablespoons of desi ghee along with 1 tablespoon of refined oil. Wait until the ghee or butter become melts. And after some time smoke came out from the wok.

Step 2 – Now add marinated mutton, and at that time the oven flame should be high. Within a few minutes, you can see the oil has been released from the marination due to the presence of curd. Continue the cooking in high Fleming for 5-7 minutes.

Step 3- After that, you can add all the powdered spices. In my recipe, I added one teaspoon of Turmeric Powder, two tablespoons of Coriander Powder, 1 tablespoon of Cumin Powder and mix well with mutton. Cook for 5-8 minutes more.

Spices for Deggi Korma

You need to cook the spiced very well because these are the main taste base of your Mutton Shahi Korma.

Step 4- After a few minutes add first the only skin of green cardamom. For this recipe, I recommend adding the cardamom skin and seeds separately. If you do this step, your recipe will become tastier.

Step 5 – As the next, you have to add Black Cardamom and then Mace and then Cinnamon. Actually, by adding this masala, the flavour of Korma has to come out and get the level of restaurant quality.

Add Whole Spices

Step 6 – In the meantime, when your spices are being cooked you need to prepare a paste of four medium-size onions. Now please add the paste into the wok. At the same time, you can add 2 tablespoons of ginger-garlic paste, and salt as per taste or need.

Step 7- Cover the wok with a lid for ten to fifteen minutes. Keep the flame in medium.

Step 8- After fifteen-minute, please check the boiling condition of the mutton. Then add one teaspoon of red chilli powder and one teaspoon of Kashmir chilli powder. Actually, Kashmir chilli powder is used for colour. So you can increase or decrease the quantity of Kashmir chilli powder as per your choice.

Step 9 – After mixing the all please add Cardamom and Nutmeg Powder Mixture for extra Scale of your dish. Then add two cups of warm water and again cover the wok for 10 minutes for the final biol.

Step 10- It’s time to add Makhana, cashews, and Watermelon seeds paste. Also, you can add the Barestha paste.

Step 11- Now cook for ten minutes on low flame and follow the content should not be burned. After 15 minutes of cooking, you get ready to serve.

Garnishing and serve

Without garnishment, no dish will be completed. So take a white bowl. Serve the mutton korma in three to five pieces. Put some gravy on it. Finally decorative by leaf. Also, you can add two pieces of green chilli and one round piece of chopped onion.
The Mutton Korma basically goes with, plain nun, butter nun, Tawa roti, lachha etc. I also suggest serving some delicious desserts after the meal.

  • 1 Large Deep Pan This will be used to cook the mutton and simmer the korma. A deep pan with a lid or a pressure cooker with a capacity suitable for the amount of mutton being cooked is recommended.
  • 1 Cutting Board and Knife You need a cutting board and knife to cut onions, ginger and garlic.
  • 1 Mixing Bowl A mixing bowl is required to mix the yogurt and the spices for marinade.
  • 1 Spatula or Wooden Spoon A spatula or a wooden spoon can be used to stir and saute the components in the pan.
  • 2-3 Measuring Spoons Measuring spoons are useful for accurately measuring the quantities of spices needed in the recipe.

Ingredients

For Marination

  • 1 kg Mutton curry cut
  • ½ tbsp Salt
  • 1 tbsp Ginger-garlic paste
  • 1 cup Yogurt

Other Ingredients

  • 1 tbsp Turmeric Powder
  • 2 tbsp Coriander Powder
  • 1 tbsp Cumin Powder
  • 5 nos. Cardamom
  • 1 nos. Black Cardamom
  • 1 nos. Mace
  • 2 inch Cinnamon
  • 4 nos. Onion paste
  • ½ tbsp Salt or as per taste
  • 2 tbsp Ginger-garlic paste
  • 1 tbsp Red Chilli Powder
  • 2 tbsp Kashmiri Red Chilli Powder
  • 1 tbsp Cardamom and Nutmeg Powder Mixture
  • 1 cup Water
  • 25 grams Makhana
  • 12 nos. Cashew
  • 10 grams Watermelon Seeds or Charmagaj
  • 2 nos. Onion finely chopped
  • 100 grams Clarified Butter or Ghee

Instructions

  • Heat ghee or oil in a large, deep pan or pressure cooker over medium heat. Add the sliced onions and sauté until golden brown. Remove half of the onions and set them aside for garnishing.
  • To the remaining onions in the pan, add ginger paste and garlic paste. Cook for a minute until the raw aroma fades away. (It's very important)
  • Add the mutton pieces to the pan and cook them until they turn brown on all sides.
  • In a bowl, combine whisked yogurt, Kashmiri red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well to form a smooth paste.
  • Pour the yogurt-spice mixture into the pan with the mutton. Stir well to coat the meat evenly.
  • Cover the pan and let the mutton cook on low heat until tender. If using a pressure cooker, cook for about 6-8 whistles or until the mutton is fully cooked and tender.

  • Once the mutton is cooked, add the roasted makhana (fox nuts) {paste} to the pan and mix gently.
  • Sprinkle garam masala over the korma and give it a final stir. Adjust the seasoning if needed.

Notes

Marination: Marinate your mutton for at least half an hour or overnight in a mixture of yogurt and spices. This will help the meat soften and let the flavors soak in.
Cooking Time: How long does it take to cook the mutton? It’ll depend on how tender the meat is and what kind of pan you’re using. If you’re using a pressure cooker, you’ll need to cook it for around 6 to 8 whistles, or until it’s cooked all the way through. But if you’re using an ordinary pan, just simmer it on low heat for a while, covered up, until it’s nice and tender and falling off the bone.
Adjusting Spice Levels: It is possible to adjust the spice levels of the recipe to suit individual preferences. For example, if one desires a more mellow korma, they can decrease the amount of Kashmiri Red chili powder in the recipe or substitute it with milder chili powder.
Roasting makhana: Raw makhana, also known as fox nuts, can be roasted in a pan in dry heat until golden brown. This adds crunch to your korma and can be kept aside and added to the korma at the end just before serving.
Garnishing: The fried onions and coriander leaves are a great addition to this dish. You can add some garam masala on top or add some fresh cream for a creamy finish.
Serving Suggestions: Mutton Deggi korma can be served with Naan, Roti, Rice, or Pulao. It can also be served with raita (a yogurt-based gravy) and fresh salad.
Leftovers and Storage: The leftovers can be stored in airtight containers in the refrigerator for the next day’s meal. The taste of mutton deggi korma is enhanced when reheated.
