Crispy Lemon Chicken

- 8 pieces Chicken thighs
- 1 tbsp Salt
- ½ tbsp Black Pepper powder
- 2 tbsp Olive oil
- 1½ tbsp Garlic chopped or minced
- ¼ cup Lemon Juice
- ¼ cup Chicken Broth
- 2 tbsp Oregano
- 1 tbsp Parsley finely chopped
- Lemon Slices for garnish
Preheat oven to 220°C. Pat thighs dry with a paper towel. Then season with salt and pepper.
Heat 2 or 3 teaspoons of oil in a large skillet over medium-high heat. When the pan is hot, sear chicken skin-side down for 8-10 minutes, until crispy and golden brown. Flip and sear the underside for another 8 minutes, until the meat is golden.
Move thighs to the side and add the garlic to the pan juices. Sauté until fragrant comes out (0 25 seconds). Pour in the lemon juice and stock, then add in the herbs
Transfer chicken to hot oven and roast until completely cooked through (about 15-20 minutes).
Garnish with parsley or coriander. Adjust salt and pepper as per taste.
Serve with lemon slices.
